Scots Gone Wild + Coffissar Bottle Release Party

The time has come! Our next limited release in the Mysterium Verum bottle series will include two beers at once: Scots Gone Wild (barrel-aged sour ale) & Coffissar (barrel-aged imperial stout with Katz coffee). Bottles will be available starting the weekend of January 28th, 2017. Instead of waiting to hunt for beers near you, come visit us in Blanco on Saturday morning to guarantee yourself some bottles from local stores Hill Country Liquor and Redbud Café, then celebrate at the brewery with free Katz coffee, a glassware giveaway for all the Scots out there, and a special brewer-led tour. Event details below:

Bottles in Blanco: Hill Country Liquor and Redbud Café will be opening at 10:00 AM on Saturday January 28th with over 150 bottles each of both Scots Gone Wild AND Coffissar. Y’all bought ‘em out the last two times we’ve done this, so there will be more bottles available for purchase at each store – plenty of beer for anyone who gets there early in the day (while supplies last!).

Tap Room Open Early: The Real Ale Tap Room will open at 10:30AM with 14 beers on tap, including Scots Gone Wild, Coffissar, and Coffee Porter.

Free Katz Coffee: Representatives from Katz Coffee – the coffee used in Coffee Porter, Coffissar, and Café de Olla Porter – will be on site with FREE Katz Coffee and bags of coffees samples to take home!

Free Glasses for Scots!: We’d like to honor all Scots and wannabe Scots with a special giveaway. Earn a free Mysterium Verum glass and a 5oz pour of Scots Gone Wild (limited to first 100 people, 1 per person) if you come to the Tap Room on Saturday 1/28 and one or more of the following is true:

– Your name is Scot. (Also acceptable: Scott.)

– You’re wearing a kilt.

– You have a Scottish passport (or a Scottish stamp in your passport).

Extra Early Tour: Head Honcho of All Things Beer (Director of Brewing Operations) Tim Schwartz is giving an earlybird tour at 11:00 AM. Regularly-scheduled tours will also be lead by a member of brew staff at 1:00 PM and 3:00 PM.

Bottle Signing: Production Manager and our Keeper of the Barrels Schmitty Schmitterson will be on-hand along with Tim to sign your bottles, answer your beer questions, and listen to your beer stories.


Scots Gone Wild

Our first big sour release, and to this day our most popular, Scots Gone Wild rapidly took the sour beer community by storm, developing an almost cult-like following overnight. The base beer for Scots Gone Wild is a strong Scotch Ale, packed with residual malt sugar that provides the perfect energy source for a dynamic secondary fermentation. Aged in oak for 12-14 months, the emerging sour ale is marked by a pronounced tartness and cherry pie finish, with a light body that belies it true strength.


Imperial stout is a style that is well suited to both barrels and coffee; Coffissar is a unique union of the two. A brief stint in a blend of Rye Whiskey barrels and American oak brings elements of vanilla and wood to round out the hop bitterness found in Commissar. A colossal addition of cold brewed coffee infuses a substantial coffee flavor, providing a smooth balance to the roast malt profile of the base beer.
