the brewery

Our brewery consists of a 60 barrel, four vessel, steam-fired brewhouse capable of producing between 54,000 and 72,000 barrels a year. We currently have four 60 barrel, six 120 barrel and three 240 barrel fermenters with one brite tank to coincide with each size fermenter. With our current cellar we have an annual capacity of 30,000 barrels.

Our four-vessel brewhouse consists of the mash tun, in which we can conduct single and step infusion as well as single decoction mashes, a lauter tun, a kettle, and a whirlpool.

All of our fermenters are cylindroconical, otherwise known as unitanks. Unitanks allow the beer to ferment and condition in the same vessel.

Our sixteen head long tube filler is capable of running 116 bottles a minute with an average daily output of 1200 cases.

Brewery Tour

Our bulk silo holds 50000 lbs. of 2-Row malted barley. We go through one silo every two weeks.

From the silo the grain heads to R2D2 for measuring and the mill for milling.

Further evidence of our commitment to quality. Look at all that English and German malt!

The grist case – last stop for the milled grain before the brew.

No that is not Apollo XI, that’s our brew kettle. Isn’t she a beauty?!

Our Comac kegging line hard at work. A keg gets cleaned, sanitized and then filled all in a matter of a few minutes.

Casks conditioning in the cellar.

Shhh! Barrel aging in progress.

Two thumbs up means the filler is running great. Thanks Brisket!
