Inspired by Oaxacan pechuga—a ceremonial spirit distilled with fruit, nuts, herbs, and spices while a cut of meat hangs in the still to add body, not flavor. Honoring that tradition, we distill TOTEM with select fruit, herbs, and spice, suspending a wild hog ham above the wash to deepen texture. Expect sweet malt, tropical fruit, warm spice, a gentle floral lift, and a faint thread of smoke. Enjoy neat or on the rocks; it also makes a bright, citrus-forward margarita.
