Distiller’s Edition Straight Malt Whiskey started with a simple challenge: we wanted to make a bourbon, but our brewhouse wasn’t built for the traditional corn-heavy mash it requires. Bourbon must be made from at least 51% corn, and that thick, sticky mash can’t run through our lautering system without clogging it. Rather than change the way we brew, we decided to reimagine what a Texas bourbon could be.
Every element of Distiller’s Edition starts in the brewhouse, where we brew the beer (without the hops) that becomes each whiskey:
- Barley and corn, from Kegger Lager, our 21st-anniversary pre-Prohibition style lager.
- Barley and rye, from Full Moon Pale Rye Ale, the very first beer ever brewed at Real Ale.
- Barley and wheat, from White, our retired Belgian-style wheat ale.
Each was brewed, fermented, distilled, and aged separately for more than four years in new American oak. Once matured, our distilling team carefully mingled the barrels in proportions designed to mirror the balance of sweetness, spice, and depth found in a fine bourbon — all made entirely here in Blanco.
