Even with a portfolio chock full of variety, our brewers are always excited about the next beer they want to brew. The Brewers’ Cut series gives our talented brewing staff an inspired outlet for these beers. With the creation of these recipes, both our team and our fans win.

  • Elderhop Saison

    Known for a diverse range of yeast-driven flavors including herbal citrus and spice, Saison also lends a tremendous amount of flexibility to the adventurous brewer who seeks to push these flavors even further through the addition of inspired ingredients. Our first foray into Saison included Sage and Blackberries, a combination right at home with the cooler weather of early Fall. As we move into Spring we’ve chosen a more citrus-forward, though still subtle, hop profile, along with the warm herbal notes of dried elderflowers. The beer is light in body, with a dry finish, with an intriguing character of floral melon and soft orange.

    Embittered Brown

    In the realm of hop-forward beers, malt flavors usually get the shaft. You could understand if they became a little…Embittered. For this round of Brewers’ Cut, we give them their due and introduce our Embittered Brown Ale.

    ABV: 5.7% IBU: 35 OG: 13.5

  • ESB

    ESB makes a return to its roots, with the finest English Crystal malts and a blend of our favorite English hops. In a marriage of subtly sweet malt and earthy citrus hop character, the ESB comes full circle.

    ABV: 5.2% IBU: 45 OG: 13

    New World Pils

    A traditional lager brewed with a new German hop variety, Huell Melon, with notes of honeydew, strawberry, and lemon zest.

    ABV: 4.5% IBU: 40 OG: 11.5

  • Session IPA

    A moderate body reveals bountiful hop character from Eureka!, which brings bright notes of peach and tropical citrus, plus unique malt character from a new (to us) base malt, English Golden Promise.

    ABV: 4.5% IBU: 45 OG: 10.5

    Café de Olla Porter

    Our most popular cask makes its way into bottles. Mexican spiced coffee joins our robust porter in a union of cinnamon, spice, and rich malt character.

    ABV: 6.6% IBU: 35 OG: 16

  • Belgian-Style Pale Ale

    Our house Belgian Ale strain and German Mandarina hops weave spicy yeast and subtle orange flavors.

    ABV 5.4% IBU 25 OG 12


    Traditional German-style black lager with subtle roastiness and a smooth, dry finish. Smooth and easy drinking, based on a German original.

    ABV: 5.8% IBU: 30 OG: 12.5

  • Blackberry Saison

    Blackberries and sage to both complement the spiciness, as well as augment the fruitiness, of a French Saison yeast strain.

    ABV: 6.5% IBU: 27 OG: 14.5


    German pilsner malt gives subtle malt sweetness while Hallertau Tradition hops provide the enticing aroma of this classic style. (Now available as our spring seasonal.)

  • Kriek

    A Belgian-style Brown Ale of subtle caramel and dark malt character aged with tart cherries from the Willamette Valley. The beer finishes clean and dry, with a hint of cherry pie enticing you back for more.

    Oyster Stout

    Texas Gulf oysters provide a perfect counterpoint to the dark roasted malt of this traditional Stout.

    ABV: 8.5% IBU: 33

  • Grand Cru

    Mandarina Bavaria Hops, plus sweet and bitter orange peel contribute a pronounced flavor and aroma that pairs with the spicy yeast character of this special Belgian ale.

    IBU: 33 OG: 18 ABV: 8.5%

    Signature Hop Pale Ale – Ultra

    Old world hop lineage with a distinct American character. Mild spiciness and subtle floral character abound in this second Signature Hop release.

  • California Common

    A lager beer fermented at warmer ale temperatures, our California Common is medium bodied, dry, and refreshing. Characterized by toffee notes and a subtle citrus hop character.

    Double IPA

    Our Double IPA dons a helm of copper color. A pronounced character of Simcoe and Amarillo hops balance a striking bitterness.

  • Witbier

    A subtle, yet flavorful ale, our Witbier is highlighted by its unique yeast character, unmalted wheat, and our house blend of herbs and spices. (Contains wheat.)


    With all of the heft of a hearty Bockbier, but none of its dark malt character, the Maibock offers a refreshingly hoppy view of the summer to come.

  • Kolsch

    A cold fermented ale that derives from Koln, Germany. Brewed with Tettnang hops and premium German pilsner malt. Delicate and crisp, hoppy and dry. (Contains wheat)

    Blonde Barleywine Ale

    Our tribute to a Bitter End Brewery original, “1000M.” Its a deceivingly blonde Barleywine, resurrected 10 years to the day of its first and only brew. (Contains wheat)

  • Altbier

    A unique variation on the Dusseldorf classic, this Sticke Alt has an elevated noble hop profile, a more pronounced bitterness, and a firm malt body. (Contains wheat)

    Imperial Red Ale

    Feel the warm embrace of malt and hops. Enjoy a bold Red Ale with firm caramel malt character and hefty doses of Centennial hops.

  • Dry-Hopped Porter

    Amarillo hops were first added to a firkin of our favorite porter. It was only a matter of time before they found their way into the fermenter.

    Signature Hop Pale Ale – Herkules

    A high alpha-acid German hop with a pronounced aroma of citrus and melon, suitable both for bittering and flavor development.

  • Black Quadrupel

    The strength of Belgian tradition meets a twist of black malt. Candi sugar, dried fruit, and a subtle dry roastiness mix for a deliciously dark complexity. (Now available year round in a 22-oz. bomber.)

Mysterium Verum

Once small and experimental, now dynamic and award-winning, this diverse family of ales utilizes new oak, used wine and spirits barrels, as well as secondary fermentation with wild yeasts and bacteria to produce complex flavors beyond the realm of traditional brewers yeasts.

ZWEIUNDZWANZIG – 22nd Anniversary Berliner Weisse

To celebrate our 22nd anniversary, we are proud to present ZWEIUNDZWANZIG (“22” in German) - an epic name for an epic brew!
With Zweiundzwanzig Berliner-Style Weisse, an old-school German beer style meets our new-school German brewhouse. The cooling loop in the brewhouse makes kettle souring highly predictable, which was key to our success with this historic style. We added Lactobacillus culture to cooled wort and allowed it to ferment for 36 hours, producing lactic acid and the soft acidity that really elevates this beer. Once acidified, we boiled the wort, cooled it again, and sent it to a fermenter to be finished by our house ale yeast. The result of this time-consuming process is a summer slammer that is refreshingly tart, with the flavor and aroma of sweet lemon. Zweiundzwanzig is delicious on its own or can be combined with traditional fruit syrups for even more tasty adventures - Prost!


  • 21 Pre-Prohibition Style Lager

    After 21 years, it’s time for a righteous kegger. Sure, we’ve been drinking beer for the past 20 years, but now we’re legal! And what better way to celebrate this time-honored coming of age than by hosting an epic field party? For those who may not be able to join us in Blanco, this is our birthday gift to you—a bong-able bevvy so easy to crush, you’ll have to charge for cups to subsidize your trips to the drive-through keg barn. So, gather your friends, pick up a keg (or five), and host a celebration at your favorite watering hole. Cheers, beers, and 21 years! ABV 4.6% IBU 22 OG 10.8

    Ghost Eye Oatmeal Stout

    A new record and a new beer bring The Sword and Real Ale Brewing Company back together for another epic release. While our first collaboration paid homage to a classic Sword track, our newest project reflects the ever-evolving body of work from both the band and the brewery. As a track, "Ghost Eye" plays in the latter half of a record marked by a pronounced progression and more dynamic sound. As a beer, "Ghost Eye" joins the ranks of our new 22oz. bomber bottles, each one a display of depth and complexity of flavor.  Ghost Eye is no exception.  Aromas of roasted grain, chocolate, and coffee are intertwined with a slightly nutty and uniquely smooth mouthfeel derived from the addition of flaked oats.  So, throw on “High Country,” grab yourself an Oatmeal Stout, and let the face melting commence. All while the Ghost Eye watches. ABV 6.5%

  • 19th Anniversary Ale Baltic Porter

    A relatively obscure sub-style of porter, this imposing brew honors the roots of its heritage. Like its English counterparts, it is malt forward with the focus on dark malt character. Our porter is a heartier brew like the inspirational beers of the Baltic region. Available for a limited time in 22-oz. bombers and on draught where you can find it. ABV 7.7% IBU 30 OG 18

    Blakkr Imperial Black Ale

    BLAKKR Imperial Black Ale is the spawn of the long awaited collaboration between Surly, Three Floyds and Real Ale Brewing Company. Subtle dark malt and toffee character quickly yields to the citrus and tropical notes provided by a staggering amount of hops. Bonded by their love of brewing and love of metal, this unholy trinity of brewers has unleashed a crushing, black as night double IPA. Hail the mighty BLAKKR!

  • SWORD Iron Swan Ale

    This beer showcases the rich toffee flavors of English crystal malt, earthy and spicy English hop character, and a subtle fruitiness from our house ale yeast. Brewed with Austin’s own, The Sword. (does not contain wheat)
